Phoebe's Chocolate Golden Cupcake Stands in the Middle
Upon selling 3,000 cupcakes this past Sunday, Phoebe Walters, founder and head of Phoebe's Cupcakes, installed a second oven to increase capacity to 6,000 cupcakes a day, starting today.
Phoebe's Cupcakes is now open for regular business hours of 8:00 AM to 9:00 PM, Tuesday to Thursday, 8:00 AM to 11:00 PM, Friday and Saturday, 8:00 AM to 11:00 PM, and 8:00 AM to 8:00 PM on Sunday (Chicago store closed on Mondays). The Chicago location is in Lakeview at 3327 N. Broadway.
Ms. Walters decided after the first hour and after the original expected turnout of 1,500 people was reached, to keep the oven going, even though the Chicago location wasn't at full capacity yet, and said, "It was such a nice day and I didn't want to disappoint anyone after the first 1,500 people were served."
People waiting in line remained patient and were enthusiastic about Phoebe's Cupcakes after trying the cupcakes. Said Leonard of Chicago, "I would stand in a pile of glass for an hour to get one of these cupcakes. I love them."
Two local Chicagoans won Phoebe's Golden Cupcake, an expensive, ultra premium, cupcake made with real gold topping. The two winners received certificates entitling them to a free cupcakes a week for life. Lien, the first winner, who works near the Chicago location, walked back into the store with gold still on her face, and said simply, "I think I won." Geoff, the other winner, also remained calm, but his girlfriend jumped into the air screaming upon seeing the golden cupcake in the box.
While Phoebe's Cupcakes provides affordable luxury with its price of $2.50 for a single cupcake bought in the Chicago store, Phoebe's Golden Cupcake is a very expensive to make, premium gourmet cupcake available for special order that is offered for weddings and other catered events at $20 per cupcake, with a minimum size order of a dozen cupcakes. There is also a silver cupcake available and cake size cupcake available for weddings and parties.
In addition to selling cupcakes, cinnamon roll cupcakes, and muffins, Phoebe's cupcakes sells coffee at a price of $1.50 for a large 20 ounce cup, compared to $1.95 for Starbucks ®, and $2.00 at Caribou Coffee® in the vicinity. The Chicago location will soon also offer milk, soda and other beverages.
Last month, Phoebe's Cupcakes received $1.5 million in venture capital funding to open the first 20 stores nationwide, from Ascent Equity Capital in Chicago.
